Ingredients of Masala Dosa:
- Boil 1 ¼ potatoes, peel and cut into cubes
- ½ tsp mustard seeds
- 1 tbsp oil
- ½ tsp urad dal (black lentils)
- 6-8 curry leaves
- 1 tsp finely chopped green chilies
- ¼ turmeric powder
- 1 tsp lemon juice
- ½ cup sliced onions
- 1 tbsp chopped coriander
- Salt to taste
- 1 ½ readymade dosa batter
- Butter
- Coconut chutney (for serving)
How to make Masala Dosa
Step 1: Mix the batter, salt and water
Mix the batter, salt and few drops of water…mix well and keep aside
Step 2: Heat non-stick pan
Heat a non-stick pan, grease with butter, sprinkle a tiny bit of water and wipe it off immediately
Step 3: Pour batter on Pan
Pour ¼ of the batter on the pan, spread it in a circular motion
Step 4: Smear Butter
Smear 2 tsp butter around the edges
Step 5: Place prepared aloo
Place the prepared aloo even on the dosa and cook until it turns brown
Step 6: Fold over using spatula
Fold over using a spatula and make a roll
Step 7: Repeat the process
Repeat the process for the remaining batter and aloo masala
Step 8: Masala Dosa is Ready
Masala Dosa is ready to eat. Served it with coconut chutney

How to make Aloo Masala
- Heat the oil in a pan and add mustard seeds
- Add urad dal, sauté for 30 sec on medium flame
- Add green chilies, onion, curry leaves and sauté for 2-3 mins
- Add potatoes, turmeric, salt, sugar, lemon juice…mix and cooked them well
- Add coriander and mix them all well…cook for 1 min on medium flame
- Let it cool, mash it lightly, keep aside.
